Thank you, Dr. McDougall!

I'm glad I thought twice before stocking up on mass amounts of Ramen on my last grocery trip. Delicious as it may be, I was looking for some healthier options in the cheap, quick, easy, and won't-go-bad-in-a-few-days department. I wish I could eat only fresh foods, but it's just too hard to stay on top of. Even the small bunch of kale I bought was quite wilty by the time I got to the end of it.

Luckily, while looking for shelf-kept soup/noodle options, I came upon Dr. McDougall's nice big individual-serving cups of dry soup. Besides the fact that McDougall is a fantastic name, I noticed that several of the flavors were gluten-free and vegan, so I decided to buy a few different kinds. The first one I tried was Tortilla soup with baked chips. I was not impressed, so the other 3 cups have been sitting around for awhile.

But, since my food supplies have been seriously dangerously low these past few days, I decided I had little choice but to quiet my rumbling tummy with another soup option. It was that, or eat plain hummus, almond butter, or raisins. hmm...So, I went with the Pad Thai noodle soup...Delicious! It was spicy and filling with delicious rice noodles! (So, needless to say, when I make a trip to the grocery store today to get some additional food options, I will also be pick up some more of Dr. McDougall's Pad Thai soup!)
